Vegetable Soup
I want to share with you all one of my favorite soups that I make for my family, friends, and more.
It is a hearty vegetable soup and it is delicious!!

Let’s begin with the recipe.
A couple (yes this part is by eying it) tablespoons of olive oil
3-4 celery stalks (chopped)
4-5 carrots (peeled and chopped)
1/2 onion (chopped)
A couple of tablespoons of minced garlic ( I buy the jar of minced garlic – kitchen saver)
3-4 russet potatoes (peeled and chopped – chop as small or large as you want)
2 cups of corn
2-3 cups of green beans
14.5 oz of vegetable broth
28 oz crushed tomatoes (or two 14.5 oz cans of diced tomatoes; when i do this i do one of diced tomatoes and one of fire roasted tomatoes ALL VERSIONS OF TOMATOES YOU CHOOSE WILL BE UNDRAINED)
Dried thyme
salt and pepper
parsley
First you are going to add the olive oil to the pot on medium to hight heat. You will then add the celery and carrots and sauté those until the celery is translucent. You will then add the onion and cook for 4-5 minutes; then add the garlic and cook for another 4 minutes. You can then add the tomatoes and vegetable broth. Bring to a rolling boil and add the potatoes. Once the potatoes are soft, go ahead and add your corn, green beans, salt, pepper, thyme, and parsley. Cook for 7-10 more minutes and then you are done!
This soup goes perfectly with any kind of bread and will warm you up through winter! Enjoy!!
